It's such a thing - it's beautiful everywhere, but you need to ride around Crete, well, that's my opinion :-) Go to Gramvousa, to Vai beach, be sure to Heraklion - the archaeological museum, well, look at the minotaur, Lake Kourna - the only lake in Crete, deserves attention. In general, there is where to go :-)
I would advise you to stay in Rethymno, I myself stayed there, and I think the best choice. Firstly, it is an old town, with its Byzantine harbor, an old town with tiny streets, and with its own fortress. There are places to play. The beaches there are wide, beautiful, many say the best in Crete. Not far from Rethymnon there is Bali Bay with the village of the same name. It's beautiful, quiet, there are almost no storms, and perhaps you can swim there. For May, Bali is probably more suitable. By the way, you can go to Santorini, ferries and boats run from Rethymnon and Heraklion.
I was in three hotels in Crete..well, European hotels, the rooms are large everywhere, the service...Greek:-) Food in hotels is normal, like everywhere else. I recommend the hotel: Demitras Village. I'll tell you why: of all the three hotels where we were, it is the only 3 star, and it would seem the worst. But I liked it more. Room: we had a two-storey one with a kitchen and two bathrooms (for two with my husband), and this hotel provided all-inclusive food :-) But I think you can only take breakfast there. Next is parking. Oh, what kind of parking is there on the beach, next to the beach - an elephant and not a parking lot. What a rarity, I must tell you. Restaurant and bar on the beach, there is no road (the road is the main nuisance). Two swimming pools, not counting the children's. There are shops, a supermarket nearby, but there are a lot of them anyway.
I have also been to Antique and Pearl Beach. I do not advise (very strongly) Bio hotel, you do not need it.
And at the expense of swimming, it’s you in vain, the summer will be hot, and the spring too, take swimwear, you can buy 100% on the lake, and in Bali Bay, and I think also on Vai, there are shallow and all around mountains, but in the pools so for sure .

oops, I mixed up the names. We were in Antique in Turkey (horses and people mixed up in a bunch), and in Greece the hotel was called Atlantic Beach! Here:-)

Why are you considering only the western part of the island? In early May it is warmer in Agios Nikolaos - Mirabello Bay. Check out Miramare Hotel, Candia Park village, Mirabello.
