We were in Crete in May from 20-30. The weather is great, but the water in the sea was cool 18-20 degrees, the pool is warmer. So you can sunbathe and swim. You need to look at hotels in Herraklion itself or Hersonissos.

I agree with the previous answer - there will be no heat, but it is quite possible to sunbathe and swim in the pool. The sea is still cold. Hersonissos is a good party place, Rethymnon is quieter. See also Chania.
