Meteors for sure! The most intelligent place that you can "take" from Halkidiki. It takes 3 hours one way, but it's worth it. Choose an excursion for the whole day, since there are few even two days, and if you add, for example, Mount Olympus (I have seen such options), then Meteora will turn out very fluently.
Olympus is so-so, you won’t go up the mountain anyway, and the museum under the mountain is not very good. Although in May, everything is green and blooming ... Maybe ...
Near Athos on a ship, only believers make sense. Thessaloniki is worth a trip, but you can do it yourself.
Petralona Cave - if you have not been in caves before, at least in Crimean, then you can. And if you did, you won't like it.
Divide immediately-for a fur coat-separately, for the sights-separately. Do not go on excursions where you are offered to go to a factory / shopping center and see some city.
There is nothing to see on Halkidiki itself. Ouranopolis near Athos, perhaps, but non-believers will not appreciate it.
From the photo on the net (!) I liked Edessa, it’s green there, there are waterfalls, but we didn’t go there and therefore I can only advise you to “google” the place and decide whether it is necessary.
Not worth it in Athens. Far, long and expensive from Halkidiki. In Athens you need 2-3 days.

I’ll add that you can go to Olympus separately / cheaply from some local office, we went like that with the Poles, everything was decent /, there, for example, visit the village of Litochoro at the foot of Olympus, the territory of the monastery of St. Dionysius. - by regular transport. We went to Edessa + Aridea, where we bathed in natural healing hot and cold springs. I recommend it. And of course for Meteora with both hands.

In late May - early June, the water is not very warm, the main thing is to go. and then it's fine. The evenings were not very hot. But overall quite comfortable. The clouds ran for a short time and the rain did not last long and again the sun. We took a car and drove ourselves to the caves (I think they are called Petralona) not very far away, the Monastery of St. Anastasia. If with a tour it is much more expensive. We took one excursion to Meteora (super!) we traveled the rest ourselves, there are maps, everyone speaks Russian (even road workers!)

Oh, yes, there is a Russian girl at the checkout in every store. Did they go there for this kind of work?
Actually, that’s all I didn’t like, how I arrived in Crimea! Halkidiki is VERY different from the rest of Greece in its focus on "Russians". All the hotels are full of our tourists, there are almost no foreign ones, they grab hands in the markets and yell "shyuba" all the sellers ... And we were on the car. If I were on a tour bus, I would go crazy)))
I just don’t like it all very much, but it seems that many people need Russian speakers everywhere)))

In Crete, too, all the saleswomen in fur coat stores are Russians, well, the market is largely oriented towards Russians and they are willingly taken there, what to do))
In Hersonissos, go to any store - ours.
But it is better to buy everything not where ours is, because ours are very hysterically stubborn, unpleasant.
