I would have done just that !!! :) Keep in mind that a cheap and comfortable bus runs from the airport to Pattaya, it departs from the lower floor, the counter is opposite the food court. The cost is 110-120 baht, the bus is modern, the interior is clean, the air conditioner works well.
A whole day on Nong Nooch is a bit much, you can cover something else on this day :)
