We really want to relax at the end of May in Greece. I would recommend you to choose Turkey for a holiday with such a small child. There are very many hotels that have a children's menu (up to broccoli whipped with a blender). And go for at least 2 weeks. I will tell you why Greece is not very suitable for this. Vacation with a child is a stupid stay of your whole family on the territory of the hotel and the beach! and EVERYTHING! and in Greece, just sitting in a hotel is blasphemy!
