I would advise you to take the first hotel closer to the airport. For example in Negombo. And then relocate further south to Unawatuna or Hikkaduwa. Shrimps and other seafood are very often for dinner at the hotel, but you can also buy it yourself at the port for $ 10 per kilo. From personal experience, I can confidently advise you a two or three day excursion into the interior of the island.
