Both hotels are very good in my opinion.
Both have a sandy beach and corals. I can't understand why the lack of pontoons is so important, but nevertheless: Siva Sharm has 2 pontoons.
I want to draw your attention to 2 points:
1) Siva Sharm is a hotel that has existed for a long time, while Barselo is quite recent (by hotel standards). That is, the first "tested by time." On the other hand, Barselo is still just beginning to "unwind", therefore, it should be cheaper than a hotel of the same level, but existing longer.
2) Barselo is REALLY far from everything in Sharm. It is located at the VERY exit from the city - on the edge of Nabq. If you are not going to leave the hotel, then everything is in order. But if you think at least once to go somewhere on your own, then it will not be so easy to do it.

There is a sea in Nabq, but there are practically no corals, and to reach the depth there is a long pontoon, but the hotel is new. If you plan to go in the near future, then the strong winds of Nabq (although there are fences in the hotel) will not bring you much pleasure.
Siwa has an amazing sea, short pontoons, you almost dive immediately into the depths, but the hotel is a bit old.

There is a minibus from Nabq right up to the old town, but it is a long road. On the same bus you can get to Naama. The price for a one-way busik is approximately $1 per person.
In Nabq, there really is nowhere to go except the promenade shopping street, but from your hotel it takes about 20 minutes to walk there)))) There is a hard rock cafe and, in fact, everything))))
Oh yes, there is a dolphinarium not far from your hotel, you can go there on foot and buy tickets on your own to watch a show or swim with dolphins. Save money on tours.

Between Jaz Belvedere and Siva sharm, I would choose Siva. There are many more opportunities for active recreation and sports. You may also like this (you wrote about the volleyball court, after all).
In addition, my tourists have said more than once that Jaz Belvedere is still a hotel "not for five, but for five with a minus", while I don’t remember any particular complaints about Siva in my practice.

This hotel is a great option for a period somewhere from the month of April.
Siwa Sharm is quite a good option for a holiday now. The advantage of this hotel's location is walking distance to the Soho boardwalk.
Jaz Belvedere - I do not recommend. The hotel itself is quite good, in terms of service, food. But he did not work out with the sea - there is a plate and shallow water near the coast. Stomping to a depth of 300 meters is a dubious pleasure.

The reef is decent, beautiful, there is enough living creatures. The pontoons are short, there is no wind.
Barceló is a resold and refurbished hotel, not new. The opening date is often written as the day the name was changed: (There is no pontoon there. In the sea, the entry is in shallow water and far away. There is nothing to see in the sea, the current, the wind.

Dreams Beach is a good hotel. But it is high on a cliff, and the beach is far below, rocky. It's also a long walk to get there. If that's not a problem, it's normal.
