There are rare exceptions when 1 day in Dahab is warm and quiet, and windy in Sharm. But this only means that the next day a strong wind from Sharm will come 2 times stronger to Dahab.
In January, going to Dahab is worth it only if you plan to go kite surfing or wind surfing. If you just go for a swim, then by no means go here - you will simply be blown away there.
For January, of all the places listed, I recommend Sharm El Sheikh - it is the warmest here.

And then the last 10 days in these hotels are cold and a terrible wind (south from the sea), even in Makadi it was warmer and calmer. Hurghada to the south, the sun is stronger, but it blows. Makadi is even further south, there are quite protected hotels. Daytime in Makadi is even hotter than in Sharm. But the nights are colder due to sudden changes in the pace in the desert.
