Alexandria..a very interesting choice. For the sake of interest, I looked at the weather in May and hotels in Alexandria. Everything is fine.. air +26..27. water is about + 22 (21..22). "Tolip Alexandria" hotel on the beach... Only one caveat, you probably have to arrange everything (book a hotel, transfer ..) yourself.

Ollennka, Madeira and the Azores in terms of "seeing" it's super in May and if you are a walrus and you feel comfortable swimming at 18-21 water t at 18-20 air t (in the Azores) and 19-24 (Madeira) then you can consider these options ;)
