I am also for Citadel Azur. Or take a look at Al Nabila Grand Hotel: fish, super sandy beach with lagoons, and coral beaches for every taste, a huge territory. Cons: far from Hurghada, little greenery. My favorite hotels in Hurghada with cool house reefs: Arabia Azur 4*, Arabella Azur 4*. Cons: children's animation - 3 points, hotels for a relaxing family holiday. See also Sunrise Garden 5*, Albatros Palace 5*.

It’s really difficult to combine with children’s recreation, but you have to choose a priority: either dad with fish or a large territory and conditions for children! I would have pushed dad unequivocally in favor of the children! Here in Arabia and Arabella the reefs are very good and right under your nose! I would advise you to consider Albatross in Sharm (Aqua Blue). For a child, it's just a paradise, for dad, to the left of the beach there is a wild beach with fish and corals. On the beach there is a normal entrance with sand for a child. The only negative is the 2nd line, but it carries a bus to the beach.
