We were in Egypt 2 times (the last time in Taba at the Hilton) and 3 times in Turkey and our windows never overlooked the sea, but this did not spoil our vacation. And from other tourists, I heard that paying extra for a sea view at the reception in the hotel itself would be cheaper than paying a tour operator when buying a ticket.

I agree with HotLine. There is no desert view in this Hyatt. Mountains nearby. Don't pay anything. And then ours are used to sticking passports for 20 dollars. If they give you a really bad number, then change it. But Hyatt is a high class hotel. Moreover, in Taba the staff is not yet spoiled, they are unlikely to offer you a very bad option.
