You can grow grapes on a certain slope, you can ferment the must without bunches, squeeze out only the juice, and achieve a light aroma of berries and a pleasant aftertaste, but it will not be so pronounced. I think you will not understand the taste of a real dry wine, but this does not mean that the wines are "tasteless" or bad. If international experts assigned their marks at competitions, this means that wine for true connoisseurs is the highest quality.

For you to understand - dry wine is prepared only from grape juice, while Cahors, tinctures - from what is left after squeezing the juice, with the addition of sugar, aromatic herbs or - in most cases - flavorings. Yes, it's nice to have a sweet sip, but after 1 glass your head will ache. Cahors and dessert wines, like port wine, have their own tradition of drinking. Bulgaria is not famous for its cahors and port wines, even when communed in church with ordinary dry wine. Each type of wine has its own taste and aroma with a certain type of snack (myry, meat delicacies - lukanka, Elena fillet, Elena but, pastrma). The wines of ordinary people who understand this are also exceptionally good. My husband's homeland is the Rousse region, this is the North of Bulgaria. They make amazing "northern" wines. After drinking a fair amount of wine - the head never hurts. And to think that a glass of wine contains fermented natural grape juice, not thermally processed, containing a lot of useful properties. We joke in the family that when you get sick, it means that homemade wine is over.. We also liked the wine house that we bought on the way from Melnik to Rozhen. It was of course a blend (a mixture of varieties)

Dear Natalia from Kyiv - I am not a fan of wine at all. I respect good cognacs and Bulgarian brandy. And wine - like any drink - is an amateur. As they say, who loves sauerkraut, and who loves young girls. And someone else is a gourmet. And throwing the words "blend", "northern" wines - probably not right. People share what they brought from their trips as tourists. And comparing the wines that I drink local is not entirely out of place.
