Near Sevastopol, on the shore of the ancient Akhtiar Bay, in deep underground stone workings, the Inkerman Fine Wine Factory is located. Here, at a depth of 5-30 meters, in the underground silence at a certain temperature, wine matures. Constant temperature from 12 to 16 oC (depending on the depth of the cellar) and humidity are ideal conditions for aging wines.
This is one of the largest classical winemaking enterprises in the Crimea, where vintage wines are produced. In 1990, according to the conclusion of the International Organization of Vine and Wine (Paris), the plant was recognized as one of the best wineries in the world. The Inkerman Vintage Wine Factory is a classic secondary winemaking enterprise. Wine materials for it are supplied by the best grape processing enterprises located in the valleys of the Alma, Belbek and Bulganak rivers - the "golden" valleys of Crimea. It is in these places that thin and elegant dry wines are obtained from grapes.
The gold fund of the Inkerman cellars is an oak container. The plant has 700 bottles (capacity from 5,000 to 20,000 liters) and 7,000 barrels (capacity from 300 to 1,000 liters). During aging in oak, complex physical and chemical processes take place in the wine, the wine acquires noble aging tones. The average aging period is 2 years for table wines and 3 years for strong and dessert wines. During this period, the plant's specialists constantly monitor the state of the wine. This is practically the only production that produces a full range of vintage table wines. Inkerman winemakers not only carefully preserve the heritage of their ancestors and the traditions of classical Crimean winemaking, but also create new wines.
